In New Zealand Manuka wood has been used for cooking food from the earliest times, Captain Cook made tea from it's leaves< hence the name Tea Tree. FOOD SMOKING is popular in New Zealand. Manuka wood is the natural choice. It imparts a delicious flavour that enhances beef, lamb, seafood, poultry and vegetables. Manuka smoked bacon, ham and chicken are favourites. For The Best Results:
Soak Brosnahan's Manuka Gold chips in water for at least 30 minutes before using. Drain.
(Wet chips give more smoke and last longer)
Gas Barbeque
Place Brosnahan's Manuka Gold chips in the special smoke box provided with your barbeque.
(Smoke box's are available from barbeque outlets)
Alternatively, wrap up Brosnahan's Manuka Gold chips in Aluminium foil with ends open and place on hot lava coals or in a tray directly above the heat source.
Charcoal Barbeque
Wait until the coals are covered with white ash before placing Brosnahan's Manuka Gold chips on top of the hot coals
General
Avoid placing the food above the smoking chips so that juices do not drip and cause a flare-up
Keep the hood closed on your barbeque, to allow the smoke flavour to penetrate the food. Adjust the smoking time to suit your taste.
